Large frying/candy thermometer
Metal slotted spoon, or spider strainer

INGREDIENTS
CHURRO DOUGH
1 ¼ c all-purpose flour
1 stick of unsalted butter
1 c water
¼ tsp coarse salt
1 large egg
2 egg yolks
1 tsp vanilla extract
½ tsp ground cinnamon
2 cups of vegetable oil for frying
CINNAMON SUGAR
¼ c granulated sugar
1 tbsp ground cinnamon
INSTRUCTIONS
Combine water, butter, salt, and cinnamon in a medium saucepan over medium to medium-high heat.
When the butter has melted, add flour and stir well until it forms a smooth dough.
Remove from heat and allow to cool slightly for 5-10 minutes.
Add the egg and egg yolks, one at a time while stirring to fully incorporate into the dough.
Heat the vegetable oil over medium to medium-high heat to 350°F.
Fill the piping bag with the dough.
Carefully pipe the dough into the pre-heated oil, about 1-2 inch strips, and fry until golden brown.
Using a spider strainer or slotted spoon, place the churros on a paper towel to blot the oil.
While they are still warm, toss them in a bowl with your cinnamon-sugar mixture.
