Want tacos that combine the richness of duck meat and the sweetness of Korean barbecue sauce? This segment of Cooking the Licht Way offers just that. INGREDIENTS
3 tablespoons soy sauce
4 teaspoons rice vinegar
1 scallion, thinly sliced
1 teaspoon ginger, minced
1 teaspoon garlic, minced
1 ½ teaspoons light brown sugar
1 teaspoon sesame oil
Red pepper flakes
1 lb duck meat, cooked and shredded
8 6-inch flour tortillas
1 oz hoisin sauce
Siracha sauce, to taste
INSTRUCTIONS
Mix first 8 ingredients together in a pan and bring to a simmer over medium-low heat.
Add duck meat and coat completely with pan sauce; simmer until warmed through.
Heat tortillas in microwave or in hot pan.
Fill warm tortillas with duck meat mixture and top with hoisin and siracha sauces, as desired.
