Brown butter Boniato
Fruit and Herb salad
Passionfruit
Beurre Blanc
INGREDIENTS BROWN BUTTER BONIATO:
5 LBS Boniato, spelled and chopped
1 STICK Butter, softened
1 STICK Butter, browned in a pan
1/2 CUP Heavy Cream
Kosher Salt
White Pepper
INGREDIENTS PASSIONFRUIT BUERRE BLANC:
1 STICK Butter
1 T Mint
1 SPRIG Thyme
1 EA Shallot
1 EA Garlic clove
5 EA Black Peppercorns
6 oz Sauternes or White Wine
4 oz Passionfruit Puree
