INGREDIENTS CORN CHOWDER:
15 Ears of Corn
1 QUART of Milk
1/2 QUART Heavy Cream
2 TSPS Garlic
1 TBSP Shallots
1/4 CUP White Wine
2 TSPS Espelette
2 EA Bay Leaf
2 Sprigs Thyme
1/2 CUP Bacon, cut into small dice
1 EA Brunoise Red Bell Pepper
1 EA Brunoise Green Bell Pepper
1 Small Brunoise Spanish Onion
1 BAG Littleneck Clams, washed thoroughly
2 PC Scallion Cut on a Bias
INGREDIENTS CORN FRITTERS:
2 Ears of Corn, cut off the cob
1 TSP Baking Powder
1 TSP Salt
1 CUP flour
1 TSP Melted Butter
2 Eggs
1/4 CUP Buttermilk
Pinch of Garlic, minced
1 TSP Blackening Seasoning
