INGREDIENTS
2 ½ c. corn salsa: Equal parts corn, red peppers, and onion
¾ c. brown lentils
INSTRUCTIONS
Rinse the lentils in a colander and pick out any shriveled lentils or non-lentils.
Put lentils in a saucepan and just cover with water. Bring to a boil over medium-high heat and then reduce heat to maintain a simmer.
Cover the pan and allow to simmer for about 15 min. or until lentils are tender, but not mushy.
Drain lentils with a colander. Place lentils in a large bowl.
Mix in the corn salsa and serve with tortilla chips.
